Chicago Popcorn – The classic caramel and cheddar mix
Probably the best know Chicago Popcorn is the Classic Caramel popcorn and cheese Popcorn mix. Everyone always says it sounds gross until they taste it and then its great. Now how the classic chicago mix is served is another question. Garrett's Popcorn serves it sticky. Other places (and myself) prefer the caramel corn to be candied – with a non sticky coating. And lets be clear, when we say Caramel and Cheese popcorn it is not both flavors on one kernel. It is a mixture of cheese popcorn kernels and Caramel popcorn kernels all in one bag.

How to make your own Chicago Popcorn
1) The easy way to make your own Chicago Popcorn classic mix.
Buy a bag of caramel popcorn, a bag of Carmel popcorn and mix them! Ok we both know that when you buy a bag of cheese popcorn the kernels are usually to soft and you won't fool anyone. BUT if you put the mix in the oven at 300 (in a preheated oven) for 5 or 10 minutes it will make the popcorn crisp. just like the real deal (OK not the same taste as the $31 a gallon premium mix but if its for a football game or party – no one will know.).
2) Make your own Chicago Popcorn Classic mix!

Step 2 – Make a batch of Caramel Popcorn with the following recipe:
Ingredients for Caramel Popcorn
- 1/2 cup corn syrup
- 1 cup packed brown sugar
- 1/2 cup margarine
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 6 cups freshly popped corn
Making the Caramel Popcorn to add to the Chicago Popcorn mix
- Preheat the oven to 250 degrees.
- Mix the Corn Syrup, Butter and brown sugar in a saucepan or coated frying pan.
- Stir over medium heat until it starts to boil.
- Let boil lightly for 5 minutes.
- Carefully remove the pan from the heat and add the vanilla and baking soda.
- Carefully poor it over the popcorn in the pan stiring with a large spoon to coat all the kernels well.
- Put popcorn in large baking pan.
- In heavy saucepan mix sugar, butter and corn syrup.
- Stir over medium heat until boiling.
- Continue boiling 5 min. without stirring.
- Remove from heat; add vanilla and baking soda.
- Pour over popcorn; stir to coat well.
- Bake in oven for 45 minutes.,
- Remove from oven and let it cool. then break apart clumps.
Step 3 – mix the cheese popcorn and the caramel corn and serve!
